    Illness and Technology Issues
Illness and Technology Issues As you may have noticed I’ve been quiet of late. This is partly due to illness that has floored me but it’s also because of website issues. Since coming back from Japan, my website has struggled with pictures. It recently changed from EHost to Sitelio so I blame this as the cause. The links break and it takes a task force on Sitelio’s end to fix the links. Yet they can’t seem to fix the root cause of the issue. So in frustration, I chose to leave Sitelio and

    Food In Japan
Food In Japan So I’m back from Japan and i’ll be honest with you, I didn’t want to come home. There were so many reasons I would prefer to remain in Japan, I could probably write a whole book on it. But one of the major reasons was because of the food. When some people think of Japanese food, I think their minds go instantly to extreme foods and assume all their cuisine is like this. However the truth of the matter is that at the heart of Japanese cuisine is a true love of ingredients and a

The 2018 International Champagne & Sparkling Wine Summit
The 2018 International Champagne & Sparkling Wine Summit I was lucky enough to be invited by Glass of Bubbly to this trade event and experience some fantastic fizz. I can’t write about all of the fabulous wines that were being showcased so here are some of my favourites from the day. I always like to big up English producers so let me introduce you to Fox and Fox. From Sussex and created from grapes that they grow themselves, Fox And Fox have produced an astounding range. I was a particular

    Japanese Convenience stores
Japanese Convenience stores Just like most people, I am busy! Yes I’m always cooking, it’s my job but also my passion. However even I don’t always have the time! Wouldn’t it be nice if I could go into a shop, a shop of convenience you could say, and simply buy a fresh, wonderfully prepared and tasty meal or snack, hot or cold, at a reasonable price no matter the time of day. Unfortunately that’s not going to happen in the UK. In our convenience stores you are lucky to get a wilted sandwich. You

    Japanese Ekiben
Japanese Ekiben I’m back from Japan and i’ll be honest with you, I didn’t want to come home. There were so many reasons I would prefer to remain in Japan, I could probably write a whole book on it. One of the major reasons was because of the food. I could go on and on about the food in Japan, so I’m going to break it down and this week I'm talking about Ekiben. I have always been in love with train travel. Luckily, here in the UK I get to travel on steam engines to indulge my romantic notions

    Japanese Street Food
Japanese Street Food So I’m back from Japan and i’ll be honest with you, I didn’t want to come home. There were so many reasons I would prefer to remain in Japan, I could probably write a whole book on it. But one of the major reasons was because of the food. Yet again, I could go on and on about the food in Japan so I’m going to break it down, starting with street food.     Honestly, I am at my happiest when i’m grazing throughout the day. I love my nibbles, more than I do big meals. Street

Results After 30 Days On The Hypocarnivore Diet
Hypocarnivore Diet Results I’m have completed a year long experiment to find the right diet for me. And I did this by mimicking the diets of certain wild animals, because animals eat exactly what they need, to be at an optimised health level. I wanted to be at my optimum health and I believe a good diet will help that. But which animals diet would suit me? That could only be done through experiment. So every 30 days I switched to a different animal's diet. And this is called the ‘Eat Like An

Top Ten Hypocarnivore Diet Dinner Ideas
Top Ten Examples of Dinner on the Hypocarnivore Diet What is the Hypocarnivore Diet? It’s a diet that is replicating how a Black Bear eats. So in the main I’ll be eating 30 % meat and the rest of the diet is made of veg, grain and fungi. Also processed food is limited if not eliminated and refined sugars are kept to a minimum and that goes for booze too.   So why should someone go on the Hypocarnivore diet you ask? It’s been widely documented that people are eating too much meat. Most eat it

  12. The Gin Festival 2018

    The Gin Festival 2018
I have been lucky enough to attend the summer Gin Festival and now the winter one. Personally I prefer the summer one as it's bigger and has more to offer and is just more fun. Oh and if you go to either, despite them saying it's a cashless system, that only includes the gin. So if you want to eat, don't forget your cash if you want food and currently they don't have a cash machine in the Tobacco Docks so get it beforehand!!

I come from a Neapolitan and English family, brought up in London, surrounded by immigrants working in the hospitality industry as my dad was a chef.

This meant I was fed an eclectic selection of meals from European to African to Asian. I absorbed it all and soon I traveled myself to learn even more beautiful dishes.

I use these recipes in my day to day life, on my friends and for events. So here is a peek into my life and the food that dominates it. And maybe one day I’ll be able to afford opening up my own little place so everyone can come eat my food.
